Cultures for dairy industry

Starter cultures for dairy products are usually communities of microorganisms that are used together with lactic acid bacteria and sometimes yeasts. These cultures help sour the milk by converting milk sugar (lactose) into lactic acid, leading to the formation of fermented or cultured dairy products.

The most common use of starter organisms is to produce lactic acid to coagulate the proteins in milk.
